Of all the Hida dagashi sweets, kokusen has the longest history, and has been passed down to the present day, albeit with some changes in form, since the Edo period. This traditional Hida dagashi is made with plenty of sesame seeds that have been specially roasted (strong roasted) to bring out their maximum aroma, and then boiled down with starch syrup to solidify.
